Seared Fillet of Scottish Beef with a Mint & Mustard Dressing

Tender Scottish fillet of beef from Ceres Butchers, this cut is best when you just don’t mess with it too much! It needs little cooking, with a peppercorn crust the fillet is seared until golden and roasted for a short time and chilled.  Thinly sliced (although when we do it ourselves at home we slice it generously!) and served with an intense mustard dressing it is a perfect simple, elegant main course to serve with Salad and a good bottle of wine!  A real treat that we cannot recommend enough as it requires no cooking at all at your end.
