Mushroom Bourguignon (V)

This is a wonderful meaty stew a super vegetarian alternative for Christmas dinner. Using portobello, shiitake, porcini and chestnut mushrooms braised with shallots in rich red wine and fresh herbs, delicious served with mashed potatoes or our Creamed Kale & Gruyere Gratin (or both!).
